Baked Apples in Cider
  • 3 to 10 good sized apples
  • 1 Tbs maple syrup per apple
  • 2.5 to 3 cups of apple cider
  1. Remove cores of apples
  2. Seal bottoms of apples and cut a 'v' shape into the top
  3. Pour 1 tbsn maple syrup into each apple
  4. Place apples into baking dish
  5. Pour 2.5 to 3 cups cider around apples
  6. Bake at 350 Degrees occasionally basting apples with cider until tender
  7. Dust nutmeg on apples
  8. Top with Whipped cream (optional)

Apple Chutney
  • 5 cups peeled, cored and chopped apples
  • 1 cup chopped green pepper
  • 1 seeded lemon, chopped
  • 1/2 cup chopped candied ginger
  • 1/4 cup slivered almonds
  • 2 cups vinegar
  • 1 pound brown sugar
  • 2 teaspoons mustard Seed
  • 1 1/2 teaspoons salt
  1. Combine all ingredients
  2. Cook at medium heat until sugar is desolved
  3. Simmer until mixutre thickens and mounds in spoon when stirred
  4. Optional
  5. Pour into sterilized jars
  6. Seal and process in boiling water

  7. - Makes 4 half-pints
    (Excellent served with cream cheese and a variety of meat dishes.)

High Country Apple Cake
  • 1 3/4 cups sugar
  • 1 cup oil
  • 1 tsp salt
  • 1 tsp baking powder
  • 2 cups unpeeled, cubed apples
  • 3 eggs
  • 2 cups flour
  • 1 tsp vanilla
  • 1 tsp Cinnamon
  • 1/2 cup pecans, chopped (optional)
  1. Measure all ingredients, except apples and pecans, into larger bowl
  2. Beat together thoroughly with spoon
  3. Fold in apples and Pecans
  4. Bake in greased and floured 9" x 13" pan at 360 degrees for 45 to 50 minutes
  5. Allow to cool and remove from pan

Grandma's Apple Pie
  • 5 to 6 cookings apples
    (Rome Apples are a good Choice)
  • 3/4 cups sugar
  • 3 Tbs corn starch
  • 2 Tbs lemon juice or 1 Tbs vinegar
  • 3 Tbs cinnamon
  • 1/4 tbs nutmeg
  • 3 Tbs butter
  • Dash of salt
  • 2 pie crusts (top and bottom)
  1. Peel and slice Apples
  2. Add lemon Juice and toss
  3. Sprinkle small amount of sugar and cinnamon in bottom of crust
  4. Add 1 Tbs of corn starch
  5. Put half of apple slices in crust
  6. Add half of sugar, cinnamon, nutmeg, and 1 Tbs corn starch
  7. Repeat layering of apples, sugar, cinnamon, nutmeg and corn starch
    - Apples will pile high in crust
  8. Dot with butter
  9. Top apples with second crust
  10. Seal crust
  11. Cut vents in top
  12. Bake 50 to 60 minute or until done

  13. - Serves 8

Apple and Cheese Casserole
  • 1/2 cup all purpose flour
  • 1/2 cup sugar
  • 1/4 tsp salt
  • 1/4 cup butter
  • 7 apples, peeled and sliced
  • 6 Tbs water
  • 1 Tbs lemon Juice
  • 1 cup shredded sharp Cheddar
  1. Mix flour, sugar and salt in small mixing bowl
  2. Cut butter until crumbly
  3. Toss apples with water and lemon juice in bowl
  4. Spoon into greased 8" baking dish
  5. sprinkle with flour mixture
  6. Bake at 350 degrees for 35 minutes
  7. sprinkle with cheese
  8. bake for an additional 5 minutes

  9. - Makes 8 servings

Apple Rum Baklava
  • 3 cups chopped apples
  • 2 1/2 cups chopped walnuts
  • 3/4 cup sugar
  • 1/2 cup raisins
  • 2 Tbs Rum
  • 2 tsp cinnamon
  • 1 pound phyllo dough
  • 1 pound butter, melted
  • 1 cup honey
  1. combine first 6 ingredients into large bowl; mix well
  2. Trim 8 sheets phyllo dough to fit 10" x 15" baking pan,brushing generously with melted butter
  3. Spread half of apple mixture over dough and cut into squares
  4. Bake at 350 degrees for 40 minutes or until golden
  5. Heat honey in small sausepan and drizzle over hot baklava
